Olive Groves: Piantoni and Piaggia a Silli.Ripening Period: It ripens earlier than other varieties. When the olives ripen, they all turn completely dark. The harvesting takes place between the last week of October and the first half of November.
Characteristics: Light, fruity aroma that is reminiscent of grass and almonds. Balanced but spicy, it tastes of almonds and artichokes.
Combinations: Fresh tomatoes and salads. Pesto made with basil, parmesan cheese, almonds and fresh tomatoes.
