This is our traditional oil that is produced following the ancient use of mixing the different varieties of olives. The olives are put in small, breathable wood boxes and taken to the pressing mill within 24-36 hours of the picking. The oil has a moderately intense fruity aroma with several nuances. It is good for cooking, dressing, and almost anything else.
