Olive Groves: Fattoressa and Piantoni Nuovi in Montefiridolfi, Piano, Piaggia and Oliveta a Terrazze a Silli.
Ripening Period: generally during the second half of November.
Characteristics: Moderately intense, it smells like premature fruit. The taste begins sweet and becomes bitter and spicy, with a hint of artichokes and fresh almonds.
Combinations: Used with moderately salty dished such as “Pappa al Pomodoro” (Tuscan bread and tomato soup), white meat off the grill, and stewed vegetables.
