Pendolino Monocultivar
Olive Groves: This variety is located on most of our fields because its main role is to pollinate olive trees of other varieties. The trees are most abundant in Oliveta dei Doppioni, Piaggia, and Campo in Vetta.
Ripening Period: This variety, generally, gives the best results when harvested between the last week of October and the first 10 days of November.
Characteristics: It is a green oil with a light, fruity aroma. The oil begins sweet with a slight almond background and gradually becomes spicy.
Combinations: Fresh dishes such as vegetables and "Verdure in Pinzimonio." Especially good on thin zucchini slices with parmesan cheese and for the preparation of "Pesto alle Genovese."
